Easy Low-Carb Chicken Tacos
So if you already know me, then you know I’m down for anything that has to do with tacos, nachos, etc. But.. I’ve been trying to reduce my carb intake so tacos were one of the first things I had to say bye to. I’ve tried taco salads without the shell and lettuce wrap tacos, but it’s just not the same. I came across these tortillas the other day at the grocery store and had to try them out! There’s only 3 g of net carbs in one tortilla! And they are so delicious! Keep reading for the recipe below!
(makes 6 tacos)
2 boneless chicken breasts
1 tbsp chilli powder
2 tsp garlic powder
1 tsp freshly ground salt and pepper
1 tbsp water
handful fresh cilantro, chopped
salsa of your choice
sour cream for topping
4-5 radish, sliced (I like to use radish instead of onion)
1 cup lettuce, shredded
1. Mix chicken, water, chili powder, garlic powder, and salt and pepper until fully coated.
2. I cooked the chicken using an Instant Pot (because I just got it am OBSESSED), but you can bake the chicken in the oven or stovetop as well. I used the pressure cook setting for 7 minutes with the chicken raised above 1 1/2 cups water.
3. Prep the rest of the ingredients while chicken cooks.
4. Assemble tacos and enjoy!
