“Raw" Cookie Dough Bites

These bite sized snacks are just like eating cookie dough out of the fridge! Love these when I’m craving cookies or a little chocolate. Make sure you are only using dark chocolate with no artificial sweeteners or preservatives. I linked my go-to chocolate below.

Ingredients

1 cup organic gluten free oats

1 cup raw cashews

1 tsp organic vanilla extract

1 tbsp coconut oil

2 tbsp coconut nectar (or maple syrup)

1/2 cup Lily’s Dark Chocolate Chips

 

Directions

In a food processor, blend together oats and cashews until they become like a flour. Add vanilla coconut oil, and coconut nectar and blend again until completely combined. Transfer mix to a large bowl. Add chocolate chips to food processor and blend on pulse until roughly chopped (not too fine) and gently stir into the mix. Roll into bite sized balls and refrigerate for 1-2 hours. Store in an airtight container and eat within 1-2 weeks.

CocoGoji Bites

These are so perfect for when I’m craving something sweet, but don’t want to overindulge on chocolate. They are full of healthy fats to keep you feeling full and the goji berries are a great energy boost. The recipe uses dates (as many vegan dessert do), but there’s something about them that just freaks me out - can’t explain it - so I don’t use them. If you skip the dates, you’ll need to make up for it with a little extra coconut nectar or something of the same consistency - a nut butter would work too!

Ingredients

1 1/2 cups cashews or walnuts

3/4 cup of pepitas

1/2 cup shredded coconut (dried flakes)

10 medjool dates, pitted (can be made without)

1/2 cup goji berries

1/4 cup coconut oil

1/4 cup coconut nectar or maple syrup (optional, but use if leaving out dates)

1/4 cup chia seeds

In a food processor, blend together nuts, coconut, and pipitas to a breadcrumb consistency. Add dates, coconut oil, and coconut nectar and blend again. Transfer to a large bowl and gently mix in goji berries and chia seeds. Roll into balls and cover in shredded coconut. Refrigerate for 1-2 hours. Store in an airtight container and eat within 1-2 weeks.
