Basil and Kale Pesto Linguine Pasta with Zoodles

Recipe adapted from The Feed Feed

(Serves 4)

Ingredients:

Kale + Basil Pesto:

  • 1 cup tightly packed fresh basil
  • 1 cup kale, roughly chopped
  • 1/2 cup pine nuts
  • 1 to 2 cloves of garlic (start with 1, add more if needed)
  • 1/2 cup extra-virgin olive oil
  • sea salt and freshly ground pepper, to taste
  • 1 tbsp lemon juice
  • 3 tbsp nutritional yeast

Instructions:

Blend fresh basil, kale, olive oil, garlic, and lemon juice in a food processor. Cook pasta according to instructions. Make zucchini noodles with a spiralizer or grater. Drain pasta. Add about ½ cup (or more) of the prepared pesto to the pot. Add pasta, zucchini noodles, and tomatoes and coat evenly with pesto. Serve and enjoy.
